Troubleshooting
Wet Cardboard / Rancid Oil
Hexanal oxidation from stale Tipo 1/wholegrain flour or poor-quality, oxidized olive oil on the pizza.
Diagnosis & Fix for Pizza: If the pizza base tastes musty like old cardboard, either the flour was stale or the olive oil was rancid. Fix: Store pizza flour cool and dry, and use only fresh, dark-bottled extra virgin olive oil!
Molecular behavior: [RADICAL LIPID PEROXIDATION] When unsaturated fatty acids in improperly stored pizza flour (especially Tipo 1, Tipo 2, semola, or wholegrain) or old olive oil oxidize through light and heat, the lipid chains break down into musty hexanal and 2-nonenal.
