Dough Rheology
The fascinating interplay of viscosity (dough flows easily) and elasticity (dough retains its shape resiliently).
The fascinating physical balance of dough management. Every hand movement balances the rheology: viscosity allows the dough to flow smoothly (plasticity, enhanced by proteases and moisture). Elasticity acts like a fine spring, pulling the structure together elastically (tension, enhanced by salt and structural folding). The art lies in precisely tuning both forces – for a shape-stable bread with optimal porosity.
[RHEOLOGICAL EQUILIBRATION] Bread dough is a non-Newtonian, viscoelastic fluid. Viscosity (extensibility) allows the dough to flow plastically under its own weight and expand in a porous manner. Elasticity (tenacity) acts like a mechanical spring, keeping the system stable. The mastery of dough management consists of balancing this relationship so that the dough expands maximally without tearing, while retaining enough surface tension to avoid spreading.
