Phase 9 (Milk Fat & Lactones)
Fior di Latte / Creamy Melt
Delta-decalactone and diacetyl during the foamy melting of Fior di Latte and Mozzarella di Bufala.
Origin & Trigger: The velvety counterpoint to fruity tomato. Fior di Latte melts with a dry, creamy character in the 450°C oven, while buffalo mozzarella (Mozzarella di Bufala DOP), with its higher fat content, releases an even more intense, slightly tangy-buttery diacetyl bouquet.
Chemical molecules: Delta-decalactone & diacetyl (2,3-butanedione)
Molecular behavior: [CASEIN MELT & LACTONE VOLATILIZATION] When heated, the calcium paracaseinate matrix of pasta filata cheese breaks apart and releases trapped milk fat droplets. Under the effect of heat, hydroxy fatty acids form cyclic delta-lactones (delta-decalactone), paired with buttery diacetyl (2,3-butanedione).
