Phase 9 (Fermentation)
Green Apple (Quick Pizza Dough)
A surplus of volatile acetaldehyde in fast direct dough processes (under 3–6 hours) with a higher yeast quantity.
Origin & Trigger: Typical of spontaneous same-evening direct doughs: the dough smells lively and fresh like green apple, but does not yet have the deep maturity esters of a 48h cold fermentation.
Chemical molecule: Acetaldehyde
Molecular behavior: [PYRUVATE DECARBOXYLATION] When fresh baker’s yeast rapidly breaks down sugar in a quick 3-hour pizza dough at room temperature, more acetaldehyde is formed than alcohol dehydrogenase can immediately reduce to ethanol. This intermediate smells fresh like green apple.
