Phase 9 (Maillard)
Short Cracker / Scrocchiarella
Fine lactones and hydroxymethylfurfural (HMF) in ultra-thin Roman scrocchiarella with olive oil in the dough.
Origin & Trigger: The hallmark of true Roman 'Pizza Romana Tonda Scrocchiarella' (as found at Piazza del Popolo in Rome): ultra-thin, rimless, and with a delicate, biscuit-like cracker aroma.
Chemical molecules: Cyclic Lactones & Hydroxymethylfurfural (HMF)
Molecular behavior: [LIPID LACTONIZATION & HMF] In Roman pizza doughs rolled out flat with the mattarello (55% hydration + 3% olive oil), the residual water evaporates almost completely. The lipids in the dough esterify under moderate stone-oven heat (330°C) into delicate lactones and HMF, creating the biscuit-like crackling aroma.
