The Enzymes: Amylase & Protease in Pizza Dough
During the long maturation, amylases break down starch into maltose for leopard spotting, while proteases relax the firm gluten for effortless Stesura.
The difference between fermentation (Lievitazione) and true maturation (Maturazione) lies in the flour's own enzymes! Alpha and beta amylases break down complex starch chains into simple sugars (maltose and glucose) during the 24–72 hour resting period. This not only provides a steady food source for the yeast but also the unfermented residual sugar for the fine dark bubbles (leopard spotting / Maculatura) at 485 °C. In parallel, proteases cut individual peptide bonds in the firm gluten network: a 48-hour matured panetto no longer snaps back like rubber when opened by hand, but can be stretched effortlessly.
